The holidays are here! This easy cranberry bark recipe will be your new best friend! Full of cranberries, pecans, marshmallows, peppermint, white and milk chocolate, and a sprinkling of smoked salt.

We spent yesterday morning with friends, delivering meals to local senior citizens through our local Meals on Wheels program. Then we enjoyed our Thanksgiving meal at my parents’ house. They always host Thanksgiving and we host Christmas. It’s a nice way to divvy up the holidays in our family.
So now we’re going full force toward Christmas. I LOVE CHRISTMASTIME! We actually started decorating our house over a week ago – no shame. Anything that brings more joy this year of all years, I’m going for it! And now I’m getting ready to plan out our holiday meal and gift giving.
Today, I’m sharing a super EASY and ridiculously delicious cranberry bark dish that can be served at any and all holiday parties. It also makes a fabulous quick and beautiful holiday gift.
Easy Holiday Cranberry Bark
Have you made chocolate bark before? It’s one of my favorite dessert recipes because it takes just 15 minutes, doesn’t require any baking or cooking, and you can mix almost any of your favorite ingredients in and it tastes AMAZING.
My Cranberry Bark consists of:
- Milk chocolate
- White chocolate
- Dried cranberries
- Peppermint candy canes
- Smoked Sea Salt
You start by melting the chocolates, then pouring the dark chocolate over a sheet of wax paper.
Then, into the bowl of white chocolate, mix in some mini marshmallows until they are softened. Pour the marshmallow white chocolate mix over the milk chocolate and use a spatula to spread it out.
Then, you get to sprinkle as many dried cranberry and pecan pieces over the chocolate as you desire. I try to sprinkle them evenly so that each bite gets a little bit of everything.
After the dried cranberries and pecans, sprinkle the crushed peppermint candy cane. Finally, sprinkle a teeny tiny amount of smoked sea salt evenly over the chocolate bark.
Oooh it’s looking pretty yummy now, isn’t it? I love how colorful this cranberry bark is with all of the dried cranberries and crushed candy canes!
Refrigerate the bark for about 15 minutes or freeze it for 10 minutes. Then, use a sharp knife to cut the peppermint holiday bark into smaller pieces. Don’t worry about even cuts or evenly sized pieces. One of the great things about holiday bark is that there is no such thing as perfect portions – it’s perfect in its odd shapes and sizes!
The dried cranberries I used for this holiday bark are from Graceland Fruit. This company has been making dried fruit since 1973, and while it has been distributed widely throughout the country, it is FINALLY (yay, yay, YAY!) available on the West Coast! You can now find Graceland Fruit in Fred Meyer stores and QFC stores throughout Oregon and Washington.
All of their dried fruit are gluten-free, allergen-free and Non-GMO. Such a great way to pack in nutrition all year long!
Dried fruit is an awesome way to keep fruit on hand for baking and cooking, without worrying about it going bad before you get the chance to use it. I’ll be honest: I’m not always a fan of dried fruit. Oftentimes, I find them too chewy and I hate biting into huge pieces of dried fruit. But Graceland Fruit dried fruits are dried properly, so that individual small pieces are easily separated, and they taste super fresh. I’d add these to salads, muffins, pies… the possibilities are endless.

Cranberry Bark with Peppermint
Keep this recipe on hand for last minute holiday guests and for all of your holiday parties!
Cranberry Bark with Peppermint
- 12 ounces milk chocolate melted
- 8 ounces white chocolate melted
- 1/4 cup Graceland Fruit Dried Cranberries
- 1/4 cup chopped pecans
- 1/4 cup mini marshmallows
- 1 small candy cane crushed into tiny pieces
- sprinkling of smoked salt
- Spread melted milk chocolate out onto a large sheet of wax paper.
- Sprinkle a small amount , about 1 tablespoon, of chopped pecans, evenly over the milk chocolate.
- Add marshmallows to the hot melted white chocolate and stir just enough to soften the marshmallows and blend them slightly into the white chocolate.
- Gently spread the white chocolate over the milk chocolate, using a spatula to move the marshmallows around so they are placed evenly throughout the chocolate bark.
- Sprinkle dried cranberries, then crushed peppermint pieces evenly over the white chocolate.
- Take a small pinch of smoked salt and sprinkle over the chocolate bark.
- Refrigerate for about 15 minutes or freeze for about 10 minutes.
- Remove and break into pieces.
