Chocolate Peanut Butter Dairy Free Vegan Popsicles

While we love making berry popsicles, sometimes you just NEED chocolate.
If you're looking to make a batch of chocolate dairy-free vegan popsicles, Almond Breeze Almondmilk Chocolate is an awesome solution. It gives you a soft chocolate flavor without being too rich. You can find Almond Breeze Almondmilk Chocolate in the dairy aisle of your grocery store, next to the other dairy-free milk options.
My kids and I had a lot of fun making these delicious, refreshing Chocolate Peanut Butter Popsicles. A LOT. They're super easy to make, with just a few ingredients.
Popsicle Tips
Have you ever tried to remove a popsicle from the mold, only to have the handle break away from the ice pop? Then you're left trying to get the ice pop back on the handle, or you end up just putting it into a bowl and eating it with a spoon . . . which defeats the purpose of making ice pops, right?
One tip that will help your ice pop release smoothly from the mold is to run the mold under warm water for about 30 seconds. This helps the popsicle loosen from the sides of the mold and release nicely without breaking away from the handle.
Sometimes, though, it's just a matter of having a bad popsicle mold. The kids and I have had bad luck with popsicle molds for the past few years. We've gone through a few different sets, and they kept breaking. Either the popsicle handle was too flimsy or too small, or the molds themselves were flimsy.
We purchased this popsicle set in a fun summery yellow color and I have to say that I think we've hit the jackpot. This ice pop set is sturdy, with a solid base, and it creates a beautiful looking ice pop!
If you wanted to, you could omit the chocolate drizzle in this recipe, and just enjoy these Chocolate Peanut Butter Vegan Popsicles plain, like this:
But that's not nearly as FUN as this:
The kids and I loved drizzling the melted chocolate over the ice pops, which then freezes the chocolate drizzle and creates a fabulous crunchy outer chocolate shell.

Chocolate Peanut Butter Dairy Free Vegan Popsicles
Ingredients
- 2 cups AlmondBreeze Almondmilk Chocolate
- ¼ cup peanut butter
- about ¼ cup dairy-free mini chocolate chips
- For Chocolate Drizzle:
- about ¼ cup dairy-free chocolate chips
- 2 teaspoons coconut oil melted
Instructions
- In a large pitcher, combine the AlmondBreeze Almondmilk Chocolate and peanut butter until well blended.
- Pour even amounts into each ice pop mold.
- Sprinkle about 1 teaspoon of mini chocolate chips into each mold.
- Cap mold with ice pop handle and place molds in the freezer. Freeze for 4-6 hours.
- Just before you're ready to remove the ice pops from the freezer, place ¼ cup chocolate chips plus coconut oil in a small bowl and microwave in 30 second increments until melted together.
- Place melted chocolate mixture into a small plastic ziplock bag with a small hole cut in one corner.
- Remove ice pops from molds and place over wax paper.
- Drizzle chocolate over each ice pop. The chocolate should harden within 1-2 minutes from the frozen ice pops.
- Enjoy!
