Simple Skillet Sausage and Peppers

  • 2 Tablespoons oil
  • 1 cup yellow onion sliced or chopped (whatever you prefer)
  • 1 garlic clove minced
  • 2 small- to medium-sized baking potatoes cut into small cubes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 cups Johnsonville Mild Italian Sliced Sausages
  • 1 small red bell pepper sliced
  • 1 small green bell pepper sliced
  • 1 small yellow bell pepper slices
  • salt and pepper
  • 2 medium-sized baking potatoes cut into small cubes


  • In a medium to large skillet, heat the oil over medium-high heat.
  • Add onions and garlic and saute lightly for about 1-2 minutes, until the onions are slightly soft.
  • Add the potatoes, sprinkle with salt, pepper, and paprika, and mix well. Cook the potatoes, constantly moving them around the pan, for 4-5 minutes, ensuring all potatoes are evenly covered with the oil and spices.
  • Add the sausage slices. Saute with the onions, garlic, and potatoes for another 4-5 minutes.
  • Add the peppers. Mix ingredients well while sauteeing in the pan for about 5-6 minutes, until the peppers are slightly soft and the potatoes are cooked.
