In a medium to large skillet, heat the oil over medium-high heat.
Add onions and garlic and saute lightly for about 1-2 minutes, until the onions are slightly soft.
Add the potatoes, sprinkle with salt, pepper, and paprika, and mix well. Cook the potatoes, constantly moving them around the pan, for 4-5 minutes, ensuring all potatoes are evenly covered with the oil and spices.
Add the sausage slices. Saute with the onions, garlic, and potatoes for another 4-5 minutes.
Add the peppers. Mix ingredients well while sauteeing in the pan for about 5-6 minutes, until the peppers are slightly soft and the potatoes are cooked.
