Add all ingredients to a food processor or high powered blender and pulse in 10-second intervals until creamy and well blended. This creates a thick, creamy consistency. If you prefer a thinner dressing, add more olive oil, a tablespoon at a time, until it reaches your desired consistency.
Makes about 1 and a half cups of dressing. Store in an airtight container in the refrigerator for up to one week.
