This time of year is bittersweet in many ways: many of you already have children who have gone back to school (ours start after Labor Day), this is when the days start getting shorter, and the abundance of fresh fruit & vegetables that summer provides starts to wane.
Thanks to the odd and extended heat wave here in the Pacific Northwest, which seems to honestly have lasted all summer long, our berry season started earlier than usual — but that means, it has been ending earlier than usual.
Oregon strawberries, which are, in my opinion, the absolute BEST strawberries in the entire planet, have been “out of season” for a few weeks already. Insert super sad face here. Have you had fresh Oregon strawberries? Hood strawberries are my favorite, and let me tell you: once you go Hood Strawberries, you can’t go back, folks. You just can’t.
So, thank goodness for the modern miracle known as the freezer.
Fresh berries that are frozen can last for several months, and they are little bits of sunshine that help Pacific Northwest residents get through the fall and winter, which I call the Grey Season. Strawberry sorbet in December? No problem! Organic berry smoothies in January? Absolutely.
So in tribute to the great Oregon strawberries that were lovingly picked and are now resting beautifully in freezers across the Pacific Northwest, I give you today’s Foodie Friday recipe: my simple, refreshing, healthy Summer’s End Strawberry Smoothie.
Summer’s End Strawberry Smoothie
I call this Summer’s End because this berry smoothie calls specifically for frozen strawberries. It’s the frozen strawberries that give it the nice icy slushy texture.
TheAlmond Breeze Almondmilk Coconutmilk Vanilla Unsweeteened that I use to make it a dairy free strawberry smoothie gives it a nice, slightly thicker texture than you would get from regular skim milk or even regular 2% milk. Plus, I just like the added depth of flavor that you get from the almondmilk coconutmilk.
As an optional sweetener, you could add the honey as I did — but it’s definitely not necessary.
- 2 cups frozen strawberries
- 1 cup Almond Breeze Almondmilk Coconutmilk Vanilla Unsweeteened
- 1 Tablespoon honey
- Puree all ingredients in a blender.
- Pour into a tall glass and smile.
Now, I know this isn’t a groundbreaking recipe as far as food and drink recipes go, but we LOVE smoothies in our house, and I’ve had so many people ask me for more smoothie recipes. If you haven’t used frozen berries in your smoothies yet, try this recipe! It’s tried and true, and a great way to help you start your day or put the pep back into your step mid-afternoon as an afternoon snack.
I like this smoothie as is, but he prefers it to have more berries, so I’ll add frozen blueberries and Marionberries (Oregon’s sweet cousin to the blackberry) to his smoothie.
