As a native Oregonian, when I moved 3,000 miles away to go to Emerson College in Boston, MA, I was instantly mesmerized by all of the new food options that we couldn’t get in Portland — or on the West Coast, for that matter. I fell in love with REAL New England clam chowder and fresh lobster with butter. The East Coast had a host of great snacks, too, perfect for college students who need lots of late night snack options. The one favorite snack that I really missed when I moved back to the West Coast was Cape Cod® Potato Chips.
But now, I can have them once again anytime I want. Cape Cod® Potato Chips are honestly my favorite kettle cooked potato chips and I am SO glad that they are now available in 60 percent of stores on the West Coast. I cannot even begin to tell you what a happy reunion this has been.
Have you had Cape Cod® Potato Chips? If you have, I am guessing you know how ridiculously good these chips are. These kettle cooked chips are crafted in small batches, and have a distinctive salty flavor with each hearty crunch. They are SO good.
And, I didn’t know this until recently, but they are also gluten free! Bonus for those who can’t have gluten or are cutting it out.
My family loves them almost as much as I do. The Waffle Fries variety are especially popular in my house.

Smoked Salmon One-Bite Appetizer
It’s like the busy mom’s take on fancy smoked salmon blinis. Instead of spending a lot of time making blinis, simply take out a handful of Cape Cod® Potato Chips, top with a small spoonful of sour cream, sliver of smoked salmon, and finish with chopped chives, salt, and pepper. Boom. Done!
In fact, I had these the other night after working most of the day (on a Sunday no less), then grocery shopping with two very hyper kids. Dinner needed to be simple and fast that night. So I made my smoked salmon potato chip appetizers, added a salad with rotisserie chicken purchased from the grocery store, and enjoyed a somewhat elegant but easy to put together meal.
These smoked salmon one-bite chip appetizers are perfect for any gathering!
And, I have to confess, that while on my elimination diet, I realized just how much I crave salty snacks at night. Potato chips and red wine: the perfect late night television watching snack combo. I can’t be the only one who digs this combo. Right?
