Hellooooo long weekend! Are you BBQing with friends and family this Memorial Day weekend?
Here are some of my fave Go To BBQ recipes that don’t actually involve the grill. You can make these while the Grillmaster of the house (your hubby, you, or your kids?) tends to the burgers, hot dogs, and grilled veggies.
Try these delicious & easy slow cooker Pulled Pork Sandwiches (adapted from The Pioneer Woman). Start this dish first and you can make the rest of your meal while it’s cooking!
In a small bowl, combine about a pound of cooked, peeled, de-veined shrimp, about 1/2 cup light mayo, 1/2 teaspoon of fresh or dried tarragon. Add 1-2 tablespoons of lemon juice, about 1/4 teaspoon of fresh lemon zest, sprinkle with salt and pepper, and mix gently. Place lettuce leaves (or arugula works too!) in hot dog rolls, then fill with shrimp mixture. YUM!
Summer Corn Salad
I LOVE this corn salad. I make it at least once a week during the summer because it truly goes with almost any summer meal. The ingredients change depending on what fresh produce we find at the local farms or farmers market, but here are the basics: fresh cooked corn off the cob, diced red peppers, green beans or asparagus in 1″ slices. Toss with a little olive oil, then sprinkle with salt, pepper, paprika, and cumin. Saute gently over a medium-high pan until you just see the colors of the veggies start to really pop (about 5 minutes).
Red, White, and Blue Cheesecake
Take your favorite cheesecake recipe. I love using this Key Lime Pie recipe. Then top with a round of sliced strawberries. Place blueberries in the shape of stars in the center. To make it easier, you can gently place a star-shaped cookie cutter on top, then fill in a single row of blueberries, and remove the cookie cutter. I obviously used thawed frozen blueberries here from one of our blueberry picking trips but would recommend fresh blueberries for a prettier presentation!
