Raspberry Lime Bellinis are a sweet, refreshing way to toast any special occasion, brunch, or al fresco lunch or dinner.
Between Easter, Mother’s Day, Cinco de Mayo, and a host of spring birthdays, baby showers, and bridal showers, there’s a lot of home entertaining that happens this time each year.
And with so many reasons to celebrate, it’s always good to have a variety of celebratory cocktail recipes to keep your occasions fun and lively. Mimosas are great, but when you want something just a little extra special, I say: go for bellinis.
Bellinis: The Perfect Brunch Cocktail
Now, if you’ve had a bellini at a chain restaurant before, you might be thinking “but bellinis are way too sweet for me!” Alas, when made correctly, they should not be! Do not fear the bellini. I’m not sure what it is about chain restaurants and their bellini recipes, but I’ve always found them to be much sweeter than bartenders at local restaurants and bars make them. And, like all cocktails, you can make them just to your liking at home!
Bellinis are a wonderful blend of a touch of sweetness from pureed fruit (and a tad bit of extra sugar) and the slight tartness and acidity of the prosecco.
They are absolutely delightful to enjoy anytime of day, but especially at brunch – a sparkly, fizzy, fruity, yet slushier celebratory cocktail than a mimosa or just straight champagne.
I love all sparkling wines, but prosecco is one that I love to especially enjoy during spring and summer. All wines labeled as prosecco are produced in Italy and made with the native grape Glera. If you’re confused about the difference between champagne, prosecco, cava, and other sparkling wines (and it totally can be confusing!), I lay out a very basic explanation of the different types of sparkling wines in my last post about sparkling wines.
For this Mixology Monday recipe, I was given a bottle of VOVETI Prosecco to try out. VOVETI is a high quality prosecco that is upscale and affordable. Only 15,000 cases of this craft prosecco are produced each year. At about $15 per bottle, it’s the perfect prosecco for everyday pairing or for chic entertaining with friends.
Prosecco Food Pairings
Prosecco and prosecco cocktails pair well with a variety of dishes – especially dishes that were made for entertaining.
The bubbly effervescence, acidity, and lively fruit flavors make prosecco a wonderful accompaniment to appetizers such as bacon-wrapped seared scallops, prosciutto-wrapped melon, and smoked tuna on pear slices; it’s also delightful with entrees such as pasta with spring veggies, poached halibut, and slow-cooked salmon with spring vegetables.
Personally, my favorite pairing for VOVETI Prosecco is with fruity desserts, such as the Easy Spring Mini Fruit Tarts recipe that I shared recently.
Seriously: those Spring Mini Fruit Tarts and these Raspberry Lime Bellinis are a match made in food + drink pairing heaven. The lime juice and lime zest found in both recipes help marry the two quite nicely.
Customize this Mixology Monday Recipe
Just like you can customize the Spring Mini Fruit Tarts, you can easily customize this cocktail recipe to your liking by switching up the fruit. I chose frozen raspberries because I think they are fantastic with prosecco, but you can also choose frozen mango, strawberries, blueberries, or peaches.
Raspberry Lime Bellinis Recipe
- 1 cup Prosecco
- 1-1/4 cup frozen raspberries
- 1 tablespoon sugar
- 1/2 teaspoon lime juice
- 1/4 teaspoon fresh lime zest
- Extra raspberries and fresh mint sprigs for garnish
- Blend Prosecco, raspberries, sugar, lime juice and lime zest in a blender until well blended.
- Pour into champagne flutes.
- Garnish with additional raspberries and fresh mint sprigs as desired. Serve immediately.
