Once a Girl Scout, always a Girl Scout, right?
Even though my daughter isn’t in Girl Scouts, we always enjoy supporting our friends’ daughters during Girl Scout Cookie sales time. And that time is NOW, my friends.
What’s your favorite Girl Scout Cookie? You know you have one! I’ve always loved Samoas, but Thin Mints are a close second. I love using them in my Thin Mint Milkshake recipe that I shared a few years ago here on Urban Bliss Life. It’s such a refreshing treat — and perfect for Saint Patrick’s day coming up!
This year, since I’m now dairy-free, I was trying to think of a dairy-free Thin Mint recipe, and ice cream was the first thing that popped into my head.
I LOVE coconut milk ice cream. If you’ve never tried it, give it a shot. It is just as delicious, but without the dairy gut bomb and usually lower in dairy, fat, and sugar than regular ice cream.
When I found out that the Girl Scouts were holding a recipe contest, I was SO excited to enter my new creation:
Thin Mint Cookie & Coffee Dairy-Free Ice Cream
YOU GUYS. This Thin Mint Cookie & Coffee Dairy-Free Ice Cream is SOOOO tasty. I love it. I am going to make it all summer long, too, thanks to having a nice stash of Thin Mint Cookies that freeze well.
And, what I love about this recipe is that it works for the thousands of us in the world who are dairy-free, but also, can easily be made with whole milk and sugar as regular dairy ice cream for those who want the full dairy flavor in it. So it’s delicious AND versatile! :)

There are four categories:
- Cakes, pies, cupcakes
- Cookies, brownies, bars
- Pudding, ice-cream, gelatin desserts
I entered my Thin Mint Cookie & Coffee Dairy-Free Ice Cream into #3: pudding, ice cream, and gelatin desserts. Entries will be accepted through March 2nd, then the Girl Scouts judges will make all of the entries and choose 16 to go on to the next phase, which will be public voting. If I make it to that phase (fingers crossed!!), then I would LOVE your votes! Because I really am just dying to share this recipe with you all!
Maybe we can collectively woo the judges? What do you say, friends? ;) You know you want a recipe that is allergy-friendly to those of us who can’t have dairy, but is also easy to make as a full-dairy recipe as well. Right?
