If you’re in need of a morning or afternoon pick-me-up, try this sweet, nutritious Mango Strawberry Carrot Smoothie!
If you follow my Instagram Stories and/or have followed this food blog through the years, you know how much my family LOVES smoothies.
My kids would have a smoothie for breakfast, lunch, and dinner if I let them (and if I had the energy to make three a day!).
We love green smoothies, watermelon smoothies, Vitamin C smoothies, strawberry smoothies… We love smoothies packed with fruits and veggies. It’s honestly the only way my kids will eat leafy green veggies like kale!
Since January is typically cold and flu season (and this year it seems to be especially bad!), I tend to make smoothies that are packed with Vitamin C this time of year.
Great sources of Vitamin C include:
- bell peppers
- brussels sprouts (who knew?)
So a few weeks ago when it seemed everyone around us started falling ill (myself included!), I started making these Mango Strawberry Carrot Smoothies.
***My son said this was maybe the BEST SMOOTHIE I HAVE EVER MADE!!!***
Well, that was all I needed to hear. You bet we’ve been making these again and again ever since!
Now, I adore mangoes year round, but they most definitely are not available fresh in the States all year round. That’s where frozen mangoes come in, as well as frozen strawberries. I always have several bags of frozen fruit from our berry picking excursions over the summer berry season, and when those run out, I rely on the organic frozen fruit at our grocery store.
The carrots and ginger are my vegetable additions to this smoothie. (Side note: there is debate about whether ginger is a vegetable or a spice… let’s go with vegetable for today). Personally, I always try to include fruits AND vegetables to each smoothie, when possible.
Ginger is actually an ingredient that I try to include in almost all of the smoothies I make for my family. We love the little added zing it gives. Ginger is also a mighty little health benefits machine, offering everything from helping boost your immune system to reducing inflammation to aiding digestion.
I love ginger so much!
We’ve really been enjoying these Mango Strawberry Carrot Smoothies in our house and I know we’ll continue making them even when the weather warms up. They are so refreshing, with just enough sweetness. And the Vitamin C boost is always a welcome treat.
I hope you enjoy them as well!
