Pork Tenderloin with Blackberry Bacon Sauce
Seasonal eating feels so much easier during summer sometimes, doesn’t it? We’ve got strawberries, blueberries, raspberries, peaches, asparagus, tomatoes… so MUCH fresh produce!
One of my favorite – and my son’s favorite – summer ingredients are blackberries. In Oregon, we’re lucky enough to have both fresh summer blackberries AND marionberries, which are the Oregon-grown cousin to blackberries.
Summer Cooking Time Savers
This dish can be made in just 30 minutes, thanks to a few kitchen time savers:
- use pre-marinated fresh pork
- use pre-sliced mushrooms
- use pre-minced garlic in a jar
For this recipe, I used Smithfield Roasted Garlic & Cracked Black Peppercorn Pork Tenderloin. It’s already pre-marinated with a delicious blend of seasonings, so all you have to do is pop it into the oven.
You can find Smithfield Marinated Fresh Pork in this flavor, and/or other delicious flavors and pork cuts at your local Safeway. We purchase various cuts and flavors of Smithfield Marinated Fresh Pork regularly (the Roasted Garlic and Herb Pork Loin Filet is also delicious!).
These marinated fresh pork cuts are always flavorful – and they roast up in just 30 minutes or less!
The flavor of the Roasted Garlic and Cracked Black Peppercorn Pork Tenderloin lends itself well to the rich, sweet bacon blackberry sauce.
Blackberry Bacon Sauce
While the pork is roasting, it’s time to make the Blackberry Bacon Sauce. It’s a super simple sauce of chopped bacon, sliced mushrooms, minced garlic, blackberries, and balsamic vinegar.
If you follow this blog, you know that bacon is a year-round essential in our house. I love the smokiness that bacon adds to the sauce. It helps balance out the tartness of the blackberries and the earthiness of the mushrooms.
To save time, you can purchase pre-sliced cremini mushrooms and a jar of pre-minced garlic at the grocery store.
The sauce only takes about 15 minutes so if it’s ready before the pork is done roasting, simply reduce to low heat and allow to simmer and thicken on the stove.
Real Flavor, Real Fast
That’s it! Super simple, right? Real flavor, REAL fast!
I love how bright and vibrant this dish is all plated up. The meat is so tender and flavorful, and the sauce is the perfect balance of smoky and sweet.
BONUS: if you’re cooking this for a family of four, or for just you and your significant other, you may have leftovers. This dish still tastes amazing the next day. I’ve made sandwiches with the leftovers and they’re so good!
